Indian Pulao
This is an elegant rice side dish and can be served with any Spiced Lentil dish
1-2 T. olive oil 3 -4 T water as needed
1 cup chopped onion 2 medium carrots,chopped
1 T minced fresh ginger 2-3 cloves garlic, chopped
3/4 tsp salt 1 bell pepper, chopped
1 tsp tumeric 1/2 cup raisins, soaked in 1/2 cup water
2 tsp ground coriander 6 cups cooked basmati rice
1 tsp cumin 1 pinch saffron
2 T. dried red pepper flakes or
1 T. smoked paprika
First step:
Basmati rice
Cook 2 cups white rice in 3 cups water 15-20 minutes to cook or
2 cups rice in 4 cups water for brown 35-40 minutes to cook
Second step:
Saute ! cup of chopped onion for 5 minutes
Add ginger and spices and simmer for another couple minutes
Third step:
Add chopped carrots and garlic to the mixture in the skillet and cook for another
5 minutes. Stir in bell pepper, adding water if needed and simmer for 5 min.
Fourth step:
Add raisins and cooked rice and stir together. Can be served immediately or is good
reheated the next day. Just add some water to a casserole dish and rice mixture and
heat at 350 degrees for 35 minutes.
Can top with toasted almonds or peanuts if desired.
